At first, the drink was enjoyed black, but as it spread throughout Europe, different countries began experimenting with adding milk and sugar to create a softer, more palatable version of coffee. It was in Vienna, Austria, that the first "Kapuziner" (the precursor to the cappuccino) emerged in the 18th century. The drink was named after the Capuchin friars, whose robes were a rich brown color. The traditional Kapuziner was made by mixing coffee with cream and sugar, creating a smooth, balanced taste.

However, it wasn’t until the early 20th century in Italy that the modern cappuccino took shape. In 1901, the first espresso machine was invented by Luigi Bezzera, revolutionizing the way coffee was brewed. This made it easier to produce the high-pressure coffee required for a true cappuccino. The addition of steamed milk and foam—key elements of the drink—followed shortly after, culminating in the cappuccino as we know it today.

This is the reason we don’t serve a “large” size cappuccino at kasdan co. And it's one of the questions we've been asked most often since opening. In North America it is not uncommon for cappuccinos to be served as 8oz or 10oz, as well. Additionally, smaller servings help keep the drink hot for longer, which means you get to enjoy the smooth, rich flavor from start to finish. This is important, especially with cappuccinos, because the combination of espresso and milk needs to be consumed while it's at the perfect temperature for the best experience.
